Preparation Steps
Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.25 cups of water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat and simmer for 18-20 minutes. Remove from heat and let it sit covered for 10 minutes.
Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Heat in the microwave for about 30 seconds until the sugar dissolves. Once the rice is done resting, transfer it to a large bowl and gently fold the vinegar mixture into the rice. Allow it to cool to room temperature.
Prepare Seabass
If not already sliced, cut the seabass fillets into thin slices, about 1/4 inch thick. Ensure the slices are fresh and of high quality.
Form Nigiri
Moisten your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape. Place a slice of seabass on top of the rice. Press gently to adhere.
Serve
Arrange the nigiri on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
