Preheat the oven

Preheat your oven to 375°F (190°C). Grease four ramekins with butter and set them aside.

Prepare the soufflé base

In a mixing bowl, combine yuzu juice, passionfruit pulp, crème fraîche, granulated sugar, vanilla extract, and a pinch of salt. Mix until smooth and well blended.

Whip the egg whites

In a separate bowl, use an electric mixer to whip the egg whites until soft peaks form. Gradually add a tablespoon of sugar and continue to whip until stiff peaks form.

Fold mixtures together

Gently fold the whipped egg whites into the soufflé base mixture in three additions. Be careful not to deflate the egg whites.

Fill ramekins

Spoon the soufflé mixture into the prepared ramekins, filling them about 3/4 full.

Bake

Place the ramekins in the preheated oven and bake for 15-18 minutes, or until the soufflés have risen and are lightly golden on top.

Serve immediately

Remove from the oven and serve immediately, as soufflés will deflate quickly.
