Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold this mixture into the warm rice and let it cool.

Slice the Hiramasa into thin strips, about 1/4 inch thick.

Prepare Hiramasa

Lay a sheet of nori on a bamboo sushi mat. Wet your hands to prevent sticking, and spread an even layer of sushi rice over the nori, leaving a small border at the top. Place slices of Hiramasa, a small dollop of wasabi, and some chopped chives along the center of the rice.

Assemble the Roll

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge of the nori with a little water.

Roll the Sushi

Using a sharp knife, slice the roll into 6-8 pieces. Drizzle with yuzu juice and sprinkle with extra chives before serving.
