Prepare the Beef

Season the beef tenderloin with salt and black pepper on all sides. Heat the vegetable oil in a skillet over high heat. Sear the beef on all sides until browned, about 1-2 minutes per side.

Chill the Beef

Remove the beef from the skillet and let it cool slightly. Wrap it in plastic wrap and place it in the freezer for about 30 minutes to firm up.

Make the Truffle Ponzu Sauce

In a small bowl, whisk together the truffle oil, soy sauce, mirin, and yuzu juice to create the ponzu sauce.

Slice the Beef

Once the beef is firm, remove it from the freezer and slice it thinly against the grain.

Arrange the sliced beef on a plate, drizzle with truffle ponzu sauce, and garnish with scallions and sesame seeds.
