Preheat your oven to 425°F (220°C). Wash and scrub the Yukon Gold potatoes thoroughly. Cut them into even-sized chunks or wedges, about 1-2 inches in size.

In a large roasting pan, add the duck fat and place it in the preheated oven for about 5 minutes, or until it is fully melted and hot.

While the duck fat is melting, mince the garlic and chop the fresh rosemary. In a bowl, toss the cut potatoes with the minced garlic, fresh rosemary, salt, and black pepper.

Roast the Potatoes

Carefully remove the hot roasting pan from the oven. Add the seasoned potatoes to the pan, ensuring they are evenly coated in the duck fat. Spread them out in a single layer. Return the pan to the oven.

Roast the potatoes for about 30-35 minutes, turning them halfway through, until they are golden brown and crispy on the outside, and tender on the inside.
