Method

Duck Fat Potatoes

1

Prepare the Potatoes

Preheat your oven to 425°F (220°C). Wash and halve the baby Yukon Gold potatoes.

2

Season and Roast

In a large bowl, toss the halved potatoes with duck fat, minced garlic, rosemary, salt, and black pepper. Spread the potatoes on a baking sheet in a single layer and roast for 30-35 minutes until golden brown and crispy.

House Worcestershire

3

Mix the Sauce

In a small bowl, whisk together soy sauce, apple cider vinegar, brown sugar, Dijon mustard, garlic powder, onion powder, and hot sauce until well combined. Set aside.

4

Prepare the Steak

Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. Pat dry and season both sides generously with salt and black pepper.

5

Cook the Steaks

In a cast-iron skillet, heat olive oil over medium-high heat. Once hot, add the steaks to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

6

Rest and Serve

Remove the steaks from the skillet and let them rest for 5 minutes before slicing. Serve with the duck fat potatoes and drizzle the house Worcestershire sauce over the top.
