    Make the Pasta Dough

    In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and crack in the eggs. Gradually mix the flour into the eggs using a fork until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for at least 30 minutes.

    Roll the Pasta

    Divide the rested dough into four pieces. Using a pasta machine or a rolling pin, roll each piece thinly into sheets. Cut into lasagna sheets that will fit your baking dish.

Tomato Meat Sauce

    Cook the Meat Sauce

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent. Add ground beef and cook until browned. Stir in crushed tomatoes, oregano, basil, salt, and black pepper. Simmer for 20-30 minutes until thickened.

Béchamel Sauce

    Prepare the Béchamel

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 2-3 minutes until golden. Gradually whisk in milk, stirring continuously to avoid lumps. Cook until thickened, about 5-7 minutes. Season with nutmeg, salt, and black pepper.

Assembly

    Assemble the Lasagna

    Preheat your wood-fired oven to 450°F (232°C). Spread a thin layer of meat sauce at the bottom of a baking dish. Layer with pasta sheets, followed by a layer of béchamel, then more meat sauce. Repeat layers, finishing with a layer of béchamel on top. Sprinkle grated Parmigiano cheese evenly over the top.

    Bake

    Place the baking dish in the wood-fired oven and bake for about 30-40 minutes, or until the top is golden and bubbling. Remove from the oven and let it rest for 10 minutes before slicing and serving.
