    In a large pot, heat the olive oil over medium heat. Add the sliced yellow onions and sauté for about 15-20 minutes, until they become soft and caramelized. Stir frequently to prevent burning.

    Once the onions are caramelized, add minced garlic and thyme. Cook for an additional 2-3 minutes until the garlic is fragrant.

    Pour in the vegetable broth and bring the mixture to a simmer. Allow it to cook for about 20 minutes, stirring occasionally.
