    Prepare Ingredients

    Chop the potatoes into small chips, slice the bell peppers and onion, and mince the garlic.

    Cook Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned on all sides. Remove from the skillet and set aside.

    Cook Protein

    In the same skillet, add the chicken thighs or shrimp, cooking until golden brown and cooked through. Remove and set aside with the sausage.

    Sauté Vegetables

    Add the remaining olive oil to the skillet. Add the sliced onions and bell peppers, sautéing until they are soft (about 5 minutes).

    Add Potatoes

    Stir in the chipped potatoes and cook for another 5-7 minutes, until they start to soften.

    Deglaze the Pan

    Add minced garlic and red pepper flakes to the skillet, cooking for 1 minute. Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the pan.

    Combine and Simmer

    Return the cooked chicken and sausage to the skillet. Season with salt and black pepper to taste. Cover and let simmer for 10-15 minutes, until the potatoes are fully cooked and tender.

Serving

    Serve the Scarpariello hot, garnished with fresh herbs if desired.
