Dough Preparation

Activate the Yeast
In a small bowl, mix warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let it Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

Prepare the Filling
In a bowl, mix the tomato sauce, diced fresh tomatoes, and a pinch of salt and pepper. Set aside.

Prepare the Cheese
In a separate bowl, combine the shredded mozzarella and fresh stracciatella cheese. Mix gently.

Prep the Basil
Rinse the fresh basil leaves and pat dry. Tear them into smaller pieces for easier distribution.
Calzone Assembly

Preheat the Oven
Preheat your oven to 475°F (245°C).

Shape the Calzone
Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion out into a 10-inch circle.

Fill the Calzone
Spread half of the tomato sauce mixture on one half of each dough circle, leaving a border. Top with half of the cheese mixture and a few basil leaves.

Seal the Calzone
Fold the other half of the dough over the filling to create a half-moon shape. Press the edges together to seal, and crimp with a fork.

Brush with Olive Oil
Transfer the calzones to a baking sheet lined with parchment paper. Brush the tops with olive oil.

Bake in the preheated oven for 15-20 minutes or until golden brown.
Serving

Serve Hot
Remove the calzones from the oven and let them cool for a few minutes. Serve warm with extra tomato sauce if desired.
