Panna Cotta Preparation

Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water. Let it sit for about 5-10 minutes until it blooms and becomes gelatinous.

Heat the Cream Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, granulated sugar, and the seeds scraped from the vanilla bean along with the empty pod. Stir until the sugar is dissolved and the mixture is just about to come to a simmer.

Combine Gelatin and Cream
Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture and stir until fully dissolved. Discard the vanilla bean pod.

Chill the Mixture
Pour the panna cotta mixture into individual serving cups or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Cook the Compote
Heat the mixture over medium heat, stirring occasionally until the berries release their juices and the mixture begins to boil. Cook for about 5-10 minutes until slightly thickened.

Cool the Compote
Remove from heat and let the compote cool to room temperature. Serve over the panna cotta.
