Arancini Preparation

Prepare the Risotto
Start by making your Parmesan risotto if you do not have any prepared. Cook Arborio rice according to your preferred recipe, stirring in grated Parmesan cheese at the end. Allow the risotto to cool completely.

Mix Filling
Once the risotto has cooled, mix in the 'nduja and diced mozzarella cheese until evenly distributed.

Form the Arancini
Scoop about 2 tablespoons of the risotto mixture into your hand. Form it into a ball and ensure it is tightly packed. Repeat until all the mixture is used.

Fry the Arancini
Heat vegetable oil in a deep pot over medium heat. Once hot, fry the arancini in batches until golden brown all over, about 3-4 minutes per batch. Remove and drain on paper towels.
Aleppo Marinara Preparation

Sauté Garlic
Add minced garlic to the hot oil and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Tomatoes and Season
Pour in the canned crushed tomatoes and stir. Season with Aleppo pepper, salt, and black pepper. Allow to simmer for 15-20 minutes to let the flavors meld.

Finish with Basil
Stir in the chopped fresh basil just before serving.
