Preparation of Olives

Combine Olives
In a large mixing bowl, combine the green olives, black olives, and Kalamata olives.
Making the Marinade

Mix Oil and Vinegar
In a separate bowl, whisk together the olive oil and red wine vinegar until well combined.

Add Herbs and Spices
Add the sliced garlic, chopped rosemary, chopped thyme, red pepper flakes, and black peppercorns to the olive oil mixture. Stir well to combine.

Season the Marinade
Taste the marinade and add salt as desired, mixing until the salt is fully dissolved.
Marinating the Olives

Coat Olives with Marinade
Pour the marinade over the olives in the mixing bowl, making sure all the olives are well coated.

Cover and Store
Cover the bowl with plastic wrap or transfer the mixture to an airtight container.

Refrigerate to Marinate
Let the olives marinate in the refrigerator for at least 24 hours to allow the flavors to meld. For best results, marinate for up to 3 days.
