Make the Dough
In a mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well. Add the softened butter and egg yolk. Begin to mix until crumbly, then add the white wine or vinegar. Knead until the dough forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Roll and Cut the Dough
On a floured surface, roll out the dough until it's about 1/8 inch thick. Use a round cutter (3-4 inches in diameter) to cut circles. You should have about 12-15 circles.

Fry the Shells
Heat oil in a deep pan over medium heat. Carefully wrap each dough circle around a metal cannoli tube and secure with a bit of water. Fry in the hot oil for about 2-3 minutes or until golden brown. Remove from oil and allow to cool on paper towels.
For the Nutella Filling

Prepare the Filling
In a mixing bowl, add the ricotta cheese, Nutella, powdered sugar, and vanilla extract. Beat until smooth and well combined.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the Nutella mixture until fully combined. If using, fold in chocolate chips.

Pipe the Filling
Transfer the Nutella filling to a piping bag. Once the cannoli shells are completely cooled, pipe the filling into each shell from both ends until filled.
