Meatballs

Grilled Bread

Method

Meatballs

  1. 1

    Prepare the Meatball Mixture

In a large bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, minced garlic, egg, chopped parsley, salt, and black pepper. Mix until just combined.

  2. 2

    Form the Meatballs

Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

  3. 3

    Bake the Meatballs

Preheat your oven to 400°F (200°C). Bake the meatballs for 20-25 minutes, or until they are browned and cooked through.

Herb Whipped Ricotta

  1. 4

    Whip the Ricotta

In a medium bowl, combine the ricotta cheese, chopped basil, chopped oregano, lemon juice, salt, and black pepper. Use a hand mixer or whisk to whip until smooth and creamy.

Tomato Basil Sauce

  1. 5

    Cook the Sauce

In a saucepan over medium heat, heat the olive oil. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the crushed tomatoes, salt, black pepper, and chopped basil. Simmer for 15-20 minutes, stirring occasionally.

Grilled Bread

  1. 6

    Prepare the Bread

Slice the baguette or crusty bread into 1-inch thick slices. Brush each slice with olive oil.

  2. 7

    Grill the Bread

Preheat a grill or grill pan over medium-high heat. Grill the bread slices for 1-2 minutes on each side, until they are toasted and have grill marks. Rub the grilled side with the halved garlic clove.
