Preparation of the Gelato Base

    Heat the Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

    Whisk Egg Yolks and Sugar

    In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

    Combine Mixtures

    Slowly pour the warm milk and cream mixture into the egg yolk mixture while continuously whisking to temper the eggs.

    Cook the Mixture

    Return the combined mixture to the saucepan over medium-low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Add Flavoring

    Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt.

    Chill the Base

    Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate until completely chilled (at least 4 hours or overnight).

Churning and Flavoring

    Churn the Gelato

    Once chilled, pour the gelato base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft serve consistency.

    Add Chocolate Chips or Fruits

    If adding chocolate chips, fresh strawberries, or mint leaves, fold them into the gelato during the last 5 minutes of churning.

    Incorporate Caramel Sauce

    If using caramel sauce, drizzle it into the gelato during the last minute of churning, creating swirls.

Freezing

    Transfer to Container

    Scoop the churned gelato into an airtight container, smoothing the top.

    Freeze Until Firm

    Cover the container with a lid and freeze the gelato for at least 4 hours to firm up.
