    Wash the lemons thoroughly to remove any wax or pesticides. Using a vegetable peeler or a zester, carefully peel the lemons, avoiding the white pith as it can add bitterness.

    In a large glass jar with a tight-fitting lid, combine the lemon peels and the high-proof vodka or grain alcohol. Seal the jar tightly and shake gently to mix. Allow the mixture to infuse in a cool, dark place for at least 7 days, shaking the jar every couple of days.

Making the Syrup

    After the infusion period, prepare a simple syrup. In a saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar is completely dissolved. Allow the syrup to cool to room temperature.
