Preheat the Grill
Preheat your grill to medium-high heat (about 400°F / 200°C).
Preparation for the Roasted Brussels Sprouts

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half.

Season and Roast
Toss the Brussels sprouts with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven at 400°F (200°C) for 20-25 minutes, until golden brown.
Preparation for the Tomato Confit

Prepare the Tomato Confit
In a saucepan, combine cherry tomatoes, olive oil, garlic cloves (smashed), fresh thyme, and salt.

Cook the Confit
Simmer on low heat for about 30 minutes, until tomatoes are soft and bursting. Remove from heat and let cool.

Plate the Dish
On each plate, serve grilled salmon topped with tomato confit, a side of roasted Brussels sprouts, a dollop of whole grain mustard, and sprinkle with toasted almonds. Drizzle with salmoriglio.
