Steak Preparation

    Preheat your grill to high heat (around 450°F to 500°F).

    Season the NY Strip Steak on both sides with olive oil, salt, and black pepper.

    Once the grill is hot, place the steaks on the grill and cook for 4-5 minutes per side for medium-rare, adjusting time for desired doneness.

    Remove the steaks from the grill and let them rest for at least 5 minutes before slicing.

Smoked Whipped Potatoes

    Peel and cut the Yukon Gold potatoes into quarters.

    Place the potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add butter, heavy cream, and smoked paprika. Using a potato masher or mixer, whip the potatoes until smooth and creamy.

    Adjust salt to taste and keep warm until serving.

Chimichurri Sauce

    In a food processor, combine the fresh parsley, fresh oregano, garlic, red wine vinegar, olive oil, red pepper flakes, and salt.

Tomato and Garlic Confit

    In a baking dish, combine cherry tomatoes, garlic cloves, olive oil, fresh thyme, and salt.
