Make the Dough
In a large mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix gently until a dough forms. Be careful not to overwork the dough.

Shape the Gnocchi
Divide the dough into sections. On a floured surface, roll each section into a long rope, about ¾ inch thick. Cut the ropes into 1-inch pieces.

Create Ridges
Using a fork, gently press down on each piece of gnocchi to create ridges, which help sauce adhere to the pasta.

Rest the Gnocchi
Place the shaped gnocchi on a floured baking sheet and let them rest while you prepare the sauce.
Preparing the Seasonal Sauce

Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Cook Tomatoes
Add the halved cherry tomatoes to the skillet. Cook until the tomatoes begin to soften and burst, about 5-7 minutes.

Add Basil and Season
Stir in the chopped basil, salt, and pepper. Allow the sauce to simmer for another 2-3 minutes.

Cook Gnocchi
In a separate pot, bring salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-4 minutes.

Combine Gnocchi and Sauce
Using a slotted spoon, transfer the cooked gnocchi to the skillet with the sauce. Toss gently to coat the gnocchi in the sauce.

Serve hot, garnished with grated Parmesan cheese and additional basil if desired.
