Preparing the Potatoes

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Potatoes

    Wash and scrub the Yukon Gold potatoes thoroughly. Cut them into bite-sized pieces, approximately 1-inch cubes.

    Season the Potatoes

    In a large bowl, toss the potato cubes with olive oil, salt, black pepper, and chopped rosemary until evenly coated.

    Arrange for Baking

    Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.

    Bake the Potatoes

    Bake in the preheated oven for 30-35 minutes, or until golden brown and crispy, turning them halfway through the cooking time.

    Add Pecorino

    Once the potatoes are crisped to perfection, remove them from the oven and sprinkle the grated Pecorino cheese over the hot potatoes. Return to the oven for an additional 5 minutes to melt the cheese.

Making Garlic Aioli

    In a medium mixing bowl, combine the mayonnaise, minced garlic, lemon juice, and a pinch of salt.

    Stir the mixture until all the ingredients are well combined and the aioli is smooth.

    Taste the aioli and adjust the salt as needed. If you prefer a stronger garlic flavor, add more minced garlic to your liking.
