Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust them with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them over a double boiler or in the microwave in 30-second intervals, stirring until smooth.

  3. 3

    Mix the Batter

In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and fluffy. Slowly add the melted chocolate mixture to the egg mixture, stirring continuously.

  4. 4

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate-egg mixture. Add the vanilla extract and fold gently until just combined.

  5. 5

    Fill the Ramekins

Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

Baking

  1. 6

    Bake the Cakes

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

  2. 7

    Cool Slightly

Remove the cakes from the oven and let them cool for 1-2 minutes. Carefully run a knife around the edges to loosen them.

  3. 8

    Invert and Serve

Invert each ramekin onto a plate and gently lift it off. The cake should release easily, revealing a gooey center. Serve immediately with vanilla ice cream and drizzle with chocolate sauce.
