Chocolate Lava Cake

Melt Chocolate and Butter
In a medium saucepan over low heat, melt the unsweetened chocolate and unsalted butter together, stirring until smooth. Remove from heat and let cool slightly.

Mix Ingredients
In a large bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until combined. Add the melted chocolate mixture and stir until smooth. Fold in the flour until just combined.

Fill Ramekins
Pour the batter evenly into the prepared ramekins, filling each about 3/4 full.

Bake
Bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft. Remove from oven and let sit for 1 minute.
Tequila Caramel Sauce

Create Caramel
In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, without stirring, until the sugar dissolves and turns a deep amber color.

Add Cream and Tequila
Remove from heat and carefully whisk in the heavy cream. It will bubble up, so be cautious. Stir in the tequila and a pinch of salt. Let it cool slightly before serving.
Walnut Topping

Toast the Walnuts
In a skillet over medium heat, melt the unsalted butter. Add the walnuts and toast for about 5-7 minutes, stirring occasionally, until golden and fragrant.
Assembly

Serve the Dessert
To serve, invert the chocolate lava cakes onto plates. Top each with a scoop of vanilla gelato, drizzle with tequila caramel sauce, and sprinkle with toasted walnuts.
