    Cook the Tagliatelle

    In a large pot of salted boiling water, cook the fresh tagliatelle according to package instructions until al dente, usually about 2-4 minutes. Drain and set aside, reserving a little pasta water.

Corn Cream

    Prepare the Corn Cream

    In a saucepan, melt the butter over medium heat. Add corn kernels, heavy cream, salt, and black pepper. Bring to a simmer and cook for about 10-15 minutes until the corn is tender. Use an immersion blender to puree the mixture until smooth. If it’s too thick, add a little reserved pasta water to reach the desired consistency.

Sautéed Bell Peppers

    Sauté the Bell Peppers

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add sliced red and yellow bell peppers. Season with salt and black pepper, and cook for about 5-7 minutes until the peppers are tender and slightly caramelized.

Assembly and Garnish

    Combine and Serve

    In a large mixing bowl, combine the cooked tagliatelle with the corn cream and sautéed bell peppers. Toss gently to coat. Serve immediately, garnished with grated pecorino cheese and chopped fresh parsley.
