Blinis Preparation

    Make the Blinis Batter

    In a mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, mix the milk, egg, and melted butter. Combine the wet ingredients with the dry ingredients and fold in the chopped dill until just combined.

    Cook the Blinis

    Heat a non-stick skillet over medium heat and add a little butter. Pour small amounts of batter onto the skillet to form mini pancakes. Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown. Remove and keep warm.

Glazed Onions Preparation

    Cook the Onions

    In a pan, melt the butter over medium heat. Add the sliced onions and cook until they begin to soften, about 5 minutes.

    Glaze the Onions

    Stir in the brown sugar, balsamic vinegar, and salt. Cook for another 10-15 minutes, stirring occasionally, until the onions are caramelized and glossy.

    Assemble the Dish

    On each blini, place a slice of hickory smoked Atlantic salmon, a spoonful of glazed onions, and a few capers. Serve with lemon wedges on the side.
