Method

Quiche Preparation

  1. 1

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add bell peppers, zucchini, and spinach, cooking until softened. Remove from heat and let cool slightly.

  2. 2

    Prepare the Egg Mixture

In a bowl, whisk together eggs, milk, salt, and black pepper. Stir in the sautéed vegetables and shredded cheese.

  3. 3

    Assemble the Quiche

Preheat the oven to 375°F (190°C). Place the pie crust in a pie dish, pour the egg and vegetable mixture into the crust, and spread evenly.

  4. 4

    Bake

Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is lightly browned. Let cool for a few minutes before slicing.

Quinoa Salad Preparation

  1. 5

    Cook Quinoa

In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let cool.

  2. 6

    Mix Salad Ingredients

In a large bowl, combine cooked quinoa, diced cucumber, cherry tomatoes, red onion, and parsley. Toss to mix well.

Raspberry Vinaigrette Preparation

  1. 7

    Combine Dressing Ingredients

In a small bowl, whisk together raspberry vinegar, olive oil, honey, salt, and black pepper. Adjust seasoning to taste.
