Prep the Ingredients
Prepare all ingredients by chopping vegetables, cleaning seafood, and cutting chicken into bite-sized pieces. Set aside.

Cook the Meats
In a large paella pan or skillet, heat olive oil over medium heat. Add the chorizo and chicken, cooking until browned, about 5-7 minutes. Remove and set aside.

Sauté Vegetables
In the same pan, add onion, garlic, and red bell pepper. Sauté until softened, about 5 minutes.

Add Rice and Tomatoes
Stir in the Bomba rice and diced tomatoes, cooking for another 2-3 minutes until the rice is well-coated.

Add Broth and Saffron
Pour in the chicken broth and add the saffron threads. Bring to a boil, then reduce heat to a simmer.

Combine Everything
Add the cooked chorizo, chicken, and frozen peas. Stir gently to combine. Let simmer for about 15-20 minutes without stirring, until the rice absorbs the liquid.

Add Seafood
In the last 5 minutes of cooking, add the shrimp and mussels on top. Cover the pan and cook until the mussels open and the shrimp are pink and cooked through.

Serve
Remove from heat, let it sit for a few minutes, and serve with lemon wedges.
