Braised Lamb

Method

Braised Lamb

    Prepare the Lamb

    Preheat your oven to 150°C (300°F). Season the lamb shoulder with salt and black pepper.

    Sear the Lamb

    In a large Dutch oven, heat the olive oil over medium-high heat. Sear the lamb on all sides until browned. Remove the lamb and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onions, carrots, celery, and garlic. Sauté until tender.

    Deglaze and Braise

    Pour in the red wine and beef stock, scraping up any brown bits. Return the lamb to the pot, add thyme and bay leaves. Cover and braise in the oven for 12 hours.

Spinach and Almonds

    Toast the Almonds

    In a dry skillet over medium heat, toast the sliced almonds until golden. Remove and set aside.

    Sauté Spinach

    In the same skillet, add olive oil and sauté the fresh spinach until wilted. Season with salt and pepper.

    Combine

    Mix the toasted almonds with the sautéed spinach, and set aside.

Thyme Sauce

    Prepare the Sauce

    Once the lamb is done, strain the braising liquid into a saucepan. Add fresh thyme and bring to a simmer, reducing slightly.

    Finish the Sauce

    Whisk in the butter until melted and combined, then season to taste.

Serving

    Plate the Dish

    Serve the braised lamb over a bed of sautéed spinach with the thyme sauce drizzled on top.
