Prepare the Prawns
Rinse the Santa Barbara spot prawns under cold water and pat them dry with paper towels.

Prepare the Salt Mixture
In a bowl, combine the kosher salt and chopped rosemary leaves. Mix well.

Prepare the Baking Dish
Preheat your oven to 400°F (200°C). Spread half of the salt mixture evenly in a baking dish.

Arrange the Prawns
Place the prawns on top of the salt layer in the baking dish. Squeeze the juice of half the lemon over the prawns.

Add Remaining Salt and Rosemary
Cover the prawns with the remaining salt mixture and place the rosemary sprigs on top.

Drizzle with Olive Oil
Drizzle the extra-virgin olive oil over the prawns and salt mixture.

Bake the Prawns
Place the baking dish in the preheated oven and bake for 12-15 minutes, or until the prawns turn pink and opaque.

Remove from the oven and let rest for a few minutes. Gently scrape off the salt crust and serve with lemon wedges.
