Preparation Directions
Prepare the Pork Cutlets
Pound the pork cutlets to about 1/2 inch thickness. Season with salt and black pepper.
Bread the Cutlets
Coat each cutlet first in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Press the breadcrumbs onto the cutlet to ensure they stick.
Fry the Cutlets
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded cutlets and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Sandwich
Slice the brötchen in half. Spread mayonnaise on both sides. Add a lettuce leaf, a fried cutlet, dill pickle slices, and a squeeze of lemon juice. Top with the other half of the roll.
Serve
Serve the schnitzel sandwich with a side of pommes.
