    Prepare the Garlic Herb Butter

    In a small bowl, mash together the softened butter, minced garlic, and chopped fresh herbs. Mix well until combined. Set aside.

    Prepare the Frites

    Peel and cut the potatoes into thick strips. Rinse them in cold water and pat dry with a towel. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potato strips in batches until golden brown, about 4-5 minutes. Remove and drain on paper towels, then season with salt.

    Cook the Steak

    Season the flat iron steak generously with salt and black pepper. Heat a cast-iron skillet or grill pan over medium-high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let rest for 5 minutes.

    Serve

    Slice the steak against the grain and serve with the garlic herb butter on top and a side of house-cut frites.
