Prepare the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

Add Garlic and Liquid

Stir in minced garlic and cook for an additional 1-2 minutes. Pour in the white wine, scraping any browned bits from the bottom of the pot. Allow to simmer for about 5 minutes.

Combine Broth and Seasonings

Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring the soup to a simmer and let it cook for another 30 minutes.

Prepare the Croutons

While the soup simmers, preheat your oven to 375°F (190°C). In a bowl, toss the cubed ciabatta bread with olive oil, garlic powder, and salt. Spread the cubes on a baking sheet and bake for 10-15 minutes or until golden brown. Remove from oven and let cool slightly.

Serve the Soup

Ladle the soup into bowls, top with baked croutons, and sprinkle with grated parmigiano-reggiano cheese. Optionally, broil the bowls for 2-3 minutes to melt the cheese.
