Prepare the Base
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.

Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while you prepare the filling.

In a large mixing bowl, beat together 24 oz cream cheese, 1 cup granulated sugar, 3 large eggs, 1 tsp vanilla extract, and 2 cups seasonal fruit puree (e.g., pumpkin, strawberry, or blueberry) until smooth and creamy.

Combine and Bake
Pour the cheesecake filling into the cooled crust. Bake at 325°F (160°C) for 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour.
