Prepare the Ingredients
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half. Mince the elephant garlic cloves and set aside.

Toss the Brussels Sprouts
In a large bowl, combine the halved Brussels sprouts, minced elephant garlic, olive oil, salt, and black pepper. Toss until the Brussels sprouts are well coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts mixture on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.

Combine with Bacon
Once the Brussels sprouts are done roasting, remove them from the oven and add the crumbled bacon. Toss to combine.

Sprinkle the roasted Brussels sprouts with grated Parmesan cheese before serving.
