    Prepare the Bone Marrow

    Preheat your oven to 450°F (230°C). Place the beef bone marrow pieces upright in a roasting pan and season with salt and black pepper.

    Roast the Bone Marrow

    Roast the bone marrow for about 15-20 minutes, or until the marrow is soft and begins to bubble at the top.

    Make the Red Onion Marmalade

    While the marrow is roasting, slice the red onions thinly. In a saucepan, add olive oil and sauté the onions over medium heat until they are soft. Add brown sugar and balsamic vinegar, and simmer until thickened, about 15 minutes. Set aside.

    Prepare the Parsley Salad

    In a bowl, mix chopped parsley, lemon juice, olive oil, salt, and pepper. Toss to combine and set aside.

    Toast the Brioche

    Toast the brioche slices in a skillet or oven until golden brown.

    Serve

    Serve the roasted bone marrow on toasted brioche, topped with red onion marmalade and parsley salad.
