    Prepare the Fish

    Preheat your wood-fired oven to about 400°F (200°C). Rinse the branzino under cold water and pat it dry with paper towels.

    Season the Fish

    Rub the inside and outside of the fish with olive oil, salt, and black pepper. Stuff the cavity with chopped parsley, dill, lemon slices, and minced garlic.

    Cooking the Fish

    Place the branzino on a grill grate or directly on the oven floor of the wood-fired oven. Cook for about 20-25 minutes, flipping halfway through, until the skin is crispy and the fish is cooked through.

    Serving

    Remove the fish from the oven and let it rest for a few minutes. Serve with additional lemon wedges and a drizzle of olive oil.
