Preparation Steps

Make the Panna Cotta
In a saucepan, combine heavy cream, whole milk, sugar, and vanilla extract. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.

Bloom the Gelatin
In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it sit for about 5 minutes until it blooms.

Combine Gelatin
Remove the cream mixture from the heat and stir in the bloomed gelatin until completely dissolved. Pour the mixture into serving cups and refrigerate for at least 4 hours or until set.

Prepare Strawberry Gelée
In a saucepan, heat the strawberry puree over medium heat. Once warm, stir in 1 tablespoon of sugar and let it cool slightly. Pour over the set panna cotta and refrigerate again until set.

Make Rosé Granita
In a bowl, combine rosé wine and water. Pour the mixture into a shallow dish and freeze. Every 30 minutes, scrape with a fork until it becomes fluffy granita.

Serve
To serve, spoon granita over the panna cotta and top with whipped cream.
