    Prepare the Ingredients

    Rinse the scallops under cold water and pat dry with paper towels. Clean the maitake mushrooms and break them into smaller pieces. Halve the cherry tomatoes, and soak the raisins in warm water for about 10 minutes to plump them up.

    Sauté the Maitake and Tomatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the maitake mushrooms and sauté for about 5 minutes until they are golden brown. Add the cherry tomatoes and soaked raisins, cooking for an additional 3-4 minutes until the tomatoes soften. Season with salt and black pepper, then remove from the skillet and set aside.

    Cook the Scallops

    In the same skillet, add the remaining olive oil and increase the heat to medium-high. Season the scallops with salt and black pepper. Place the scallops in the skillet and cook for about 2-3 minutes on each side until they are golden brown and opaque in the center.

    Prepare the Watercress Salad

    In a small bowl, mix the Dijon mustard with a tablespoon of olive oil and a pinch of salt and pepper to create a dressing. Toss the watercress with the dressing just before serving.

    Plate and Serve

    On a serving plate, arrange the sautéed maitake mushrooms, tomatoes, and raisins. Place the cooked scallops on top and garnish with the dressed watercress. Serve immediately.
