    Prepare the Hash Browns

    Grate the russet potatoes and soak them in cold water for 15 minutes. Drain and pat dry. Heat the vegetable oil in a skillet over medium heat.

    Cook the Hash Browns

    Add the grated potatoes to the skillet, season with salt and black pepper, and cook until crispy and golden brown, about 5-7 minutes on each side.

    Make the Fire Roasted Relish

    Char the tomatoes, red bell pepper, onion, and garlic over an open flame or under the broiler until blistered. Chop the charred vegetables and mix with olive oil, lime juice, cilantro, and salt.

    Cook the Eggs

    In a separate skillet, melt the butter over low heat. Crack the eggs into the skillet, cover and cook until the whites are set but yolks are still runny, about 2-3 minutes.

    Assemble the Dish

    Serve the crispy hash browns topped with fire roasted relish and a sunny side up egg. Sprinkle with black salt to taste.
