Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a large bowl, mix together the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth.

Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off, and carefully place them into the hot oil.

Fry the Rings
Fry the onion rings in batches, cooking for about 2-3 minutes per side or until golden brown. Remove and drain on paper towels.

Serve
Serve hot with horseradish mustard sauce on the side.
