Prepare the Cauliflower
Preheat your oven to 180°C (350°F). Bring a large pot of salted water to a boil. Add the cauliflower florets and blanch for about 5 minutes until slightly tender. Drain and set aside.

Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to form a roux. Gradually whisk in the milk and heavy cream, cooking until the mixture thickens. Remove from heat and stir in the grated comté cheese, minced garlic, salt, black pepper, and nutmeg until smooth.

Combine and Assemble
In a baking dish, arrange the blanched cauliflower florets. Pour the cheese sauce over the cauliflower, ensuring it is well coated.

Prepare the Breadcrumb Topping
In a small bowl, mix the breadcrumbs with a little olive oil, salt, and pepper. Spread the breadcrumb mixture evenly over the top of the cheese sauce.

Bake
Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and crispy. Remove from the oven and let cool slightly before serving.
