    Chill glass

    Place a highball or Collins glass in the freezer for a few minutes or fill it with ice and water to chill while you prepare the cocktail.

    Combine spirits and modifiers

    In a cocktail shaker, add 1.5 oz house orangecello, 0.5 oz Domaine de Canton, 0.5 oz citric stock, and 1 oz chilled hibiscus water.

    Add ice and shake

    Add a large handful of ice (about 3/4 cup) to the shaker and shake vigorously for 10–12 seconds to chill and lightly dilute the mixture.

Top & Finish

    Prepare glass

    If you used ice to chill the glass, dump the ice water and add fresh ice (about 1 cup) to the glass.

    Strain and top

    Double-strain (or fine-strain if you prefer) the shaken mixture into the prepared glass over fresh ice. Top with 2 oz of chilled club soda, pouring gently to preserve effervescence.

    Garnish and serve

    Express an orange twist over the cocktail to release oils, rim the glass with the twist and drop it in as a wheel. If using, float a single dried hibiscus or edible flower on top. Serve immediately.

    Serving suggestion

    This makes a bright, lightly effervescent cocktail; adjust citrus (citric stock) to taste if you prefer it more tart (increase by 0.25–0.5 oz) or sweeter (decrease citric stock).
