1. Chill or bring to temperature

Carefully cut the foil below the lip, wipe the top of the bottle with a clean cloth, and use a waiter’s corkscrew to remove the cork smoothly. Inspect the cork for any signs of spoilage (musty or wet cork).

If the wine is young (under ~5 years) or you want more pronounced aromatics, pour the wine slowly into a decanter for 20–45 minutes to allow it to breathe.
