Preparation

Chill glassware
Place 12 coupe or rocks glasses in the refrigerator or fill with ice water to chill while you prepare ingredients.

Make simple syrup
Combine equal parts granulated sugar and water in a saucepan (enough to yield 12 oz finished). Heat gently, stirring until sugar dissolves. Cool and refrigerate. (Alternatively use store-bought.)

Make honey syrup
Warm equal parts honey and water just until combined and pourable. Cool before use.

Prep fruit
Juice limes, lemons, and oranges until you have approximately: 10 oz lime juice, 5 oz lemon juice, 8 oz orange juice. Core and dice pineapple and strawberries; reserve for muddling and garnish.
Cocktail: Rotating Daiquiri (serves 4)

Combine in a shaker: 6 oz white rum, 2 oz fresh lime juice, 1.5 oz simple syrup, and 3 hulled strawberries (muddled). Add ice and shake vigorously for 12–15 seconds until well chilled. Double-strain into 4 chilled coupe glasses. Garnish each with a strawberry or lime wheel.
Cocktail: Rotating Paloma Twist (serves 4)

In a pitcher, combine 6 oz blanco tequila, 4 oz fresh grapefruit or orange juice (use orange if grapefruit unavailable), 1.5 oz lime juice, 1.5 oz agave nectar, and a pinch (4 dashes) orange bitters. Stir to combine and add 12 oz club soda just before serving. Build over ice in 4 highball glasses, garnish with lime wheel and a sprig of mint.
Cocktail: Rotating Botanical Fizz (serves 4)

In a mixing glass, gently muddle 8 basil leaves with 0.5 oz ginger syrup and 0.5 oz honey syrup. Add 6 oz gin, 2 oz fresh lemon juice, and 2 oz aperitif. Fill with ice and shake briefly. Strain into 4 ice-filled Collins or highball glasses and top each with club soda (about 2 oz each). Slap a mint sprig and add as garnish, or float a basil leaf.
Cocktail: Citrus Spark (serves 4)

Combine 3 oz orange liqueur, 4 oz fresh orange juice, 1 oz lemon juice, 1.5 oz simple syrup, and 4 oz white rum in a shaker with ice. Shake 10–12 seconds, strain into 4 chilled coupe glasses. Float 2 drops Angostura bitters on top of each for aroma and garnish with an orange slice.

Rotate offerings during service: present cocktails in the order above so guests sample light, bright rum strawberry daiquiri, then the spritzy Paloma, then the botanical gin fizz, finishing with the citrus-forward orange spark. Keep syrups chilled and pre-batch base mixes (spirit + primary citrus + sweetener) in the fridge to expedite service—label each pre-batch and note the final dilution needed (shake with 1 part ice to 1 part mix).

Ensure glassware is rimmed or garnished consistently. Replace ice frequently and replenish fresh herbs and cut fruit every 2–3 hours for best flavor.
