    Chill and prepare glass

    Place a rocks glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to lightly chill; discard ice water before building if used.

    Build in mixing glass

    In a mixing glass add 0.25 oz demerara sugar syrup (or simple syrup), 0.5 tablespoon orange zest cordial, and 3 dashes house bitter blend. Stir briefly to combine the cordial and syrup with the bitters so the sugar dissolves and flavors marry.

    Add bourbon and stir

    Add 2 oz of the Old Forester single-barrel bourbon to the mixing glass. Fill the mixing glass with large ice cubes and stir gently for 20–30 seconds (about 15–20 full rotations) until the mixture is well chilled, slightly diluted, and clear.

    Prepare serving glass

    Remove the chilled rocks glass from the freezer (or discard the chilling ice water). Place one large 'Ghost Ice' sphere or large clear cube into the serving glass.

    Strain and finish

    Double-strain or fine-strain the stirred cocktail from the mixing glass over the Ghost Ice into the waiting rocks glass to avoid any loose ice or solids.

    Garnish and aromatic finish

    Take an orange peel and hold it over the drink, flesh side facing the surface. Express the oils by giving the peel a firm squeeze so a light spray of oil lands on the cocktail, then rim the glass with the peel and drop it in as a garnish. Optionally, add 1 quick spritz of expressed orange oil or a single perfumed spritz (e.g., an absinthe rinse or bar bitters spritz) for an aromatic lift.

    Serve

    Present immediately with a small spoon or coaster. Advise the guest to sip slowly so the Ghost Ice melts minimally, preserving dilution and flavor.
