Basil Simple Syrup (make ahead)

Combine 1 cup sugar and 1 cup water in a small saucepan over medium heat. Stir until the sugar fully dissolves and the mixture comes just to a simmer.

Remove the pan from heat and immediately add the packed cup of fresh basil leaves. Stir lightly to submerge the leaves and cover the pan. Let steep for 20–30 minutes until the syrup cools and is strongly basil-infused.

Strain the syrup through a fine sieve or cheesecloth into a clean container, pressing the basil gently to extract flavor. Cool completely, then refrigerate. Yields about 8 oz; keeps 7–10 days refrigerated.

If you prefer a chilled glass, place a coupe or chilled rocks glass in the freezer 5–10 minutes before mixing, or fill with ice water while you prepare the drink.

In a shaker, combine 2 oz Havana Club Añejo Blanco rum, 0.5 oz St. George Aqua Perfecta basil eau de vie, 1 oz fresh lime juice, and 0.75 oz basil simple syrup.

Add plenty of ice (about 6 oz or a full shaker) to the shaker. Cap and shake vigorously for 12–15 seconds until the shaker is well-chilled and a light frost forms on the outside.

If serving over crushed ice: fill the serving glass with crushed (or cracked) ice. If serving straight up: strain into the chilled coupe. Double-strain through a fine mesh if you want a clearer, finer-textured cocktail.

Garnish with a fresh basil sprig laid over the rim and a lime wheel or a twist of lime zest. Optionally slap the basil between your palms once to release oils before garnishing for extra aroma.
