Build and chill base
Add the gin, blood orange liqueur, bitter orange aperitif, fresh blood orange juice, lemon juice, simple syrup and orange bitters into a mixing glass or cocktail shaker. Add ice (about 1 cup) and stir gently for 15–20 seconds to chill and lightly dilute. Do not over-aerate—this is primarily to chill the base, not to create foam.

Strain
Double-strain (or fine-strain) the chilled mixture into a large wine glass or stemmed coupe filled halfway with fresh ice (or a single large ice cube). Straining removes small pulp and ice shards and keeps the spritz bright.

Top with sparkling rosé
Slowly top with 4 oz sparkling rosé. Pour gently over the back of a spoon or down the inside of the glass to preserve carbonation and create a gentle layered effect between the fortified base and the wine.

Lightly stir
Give the cocktail one or two gentle stirrings with a bar spoon to integrate the sparkling wine with the base without flattening the bubbles.

Float a blood orange wheel on the surface of the drink and tuck the thyme or rosemary sprig alongside it. Clap the herb briefly between your palms to release aromatics before placing it in the glass.

Serve immediately while sparkling wine is lively. Offer a small straw or cocktail pick if desired.
