    Prepare the Filet Mignon

    Season the filet mignon with salt and pepper. Sear in a hot skillet with a bit of oil for about 2-3 minutes on each side until browned. Remove from heat and let cool.

    Make Mushroom Duxelles

    Finely chop mushrooms and sauté in a pan with butter and shallots until all moisture is evaporated, about 10-15 minutes. Season with salt and pepper and let cool.

    Prepare Brie Fondue

    In a small saucepan, heat the brie cheese with a splash of cream over low heat until melted and smooth. Stir continuously to prevent burning.

    Assemble the Wellington

    Roll out the puff pastry on a floured surface. Spread the mushroom duxelles evenly over the pastry. Place the cooled filet mignon on top, and pour the brie fondue over the steak.

    Wrap and Bake

    Fold the pastry over the filet mignon and seal the edges. Brush the top with an egg wash. Bake in a preheated oven at 200°C (400°F) for 25-30 minutes or until golden brown.
