Prep the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips (about 1/8 inch thick) to create shoe-string fries.

Drain and Dry
After soaking, drain the potatoes and pat them dry with a clean towel or paper towels to remove excess moisture.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

Fry the Potatoes
Carefully add a handful of the potato strips to the hot oil, making sure not to overcrowd the pot. Fry in batches for about 3-4 minutes or until golden brown and crispy.

Serve
Serve the prime fries hot as a side dish or snack. Enjoy!
