Prepare the Steak
Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes. This helps it cook more evenly.

Season the Steak
Pat the steak dry with paper towels. Season generously with salt and black pepper on both sides.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Sear the Steak
Add the filet mignon to the skillet. Sear for about 4-5 minutes on the first side, without moving it, until a golden-brown crust forms.

Flip and Cook
Flip the steak and add butter, garlic cloves, and rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, basting with the melted butter.

Check Doneness
Use a meat thermometer to check for doneness. For medium-rare, aim for an internal temperature of 130°F (54°C).

Rest the Steak
Remove the steak from the skillet and place it on a cutting board. Let it rest for about 5 minutes before slicing.

Slice the filet mignon against the grain and serve immediately, optionally drizzled with pan juices.
